Eat Your Greens!

Monday - Oct 23, 2023

Welcome to Week 2! Thanks to everyone who’s been reading, sharing and sending feedback our way - and a big welcome to all of our new subscribers.

As always, we bring you quick, useful and fun cooking inspiration each day from places we like from around the web, in 3 minutes or less.

Let’s get to it, clock’s tickin’!

Everyday Recipes

  • I love escarole so I’m always up for trying new ways to cook it other than in Utica Greens (if you read all the way to the bottom I’ll tell you what that is). This Pasta with Escarole and Chickpeas from Food Network Kitchen, looks like a great way to bulk a bunch of greens up into a satisfying week night meal.

  • If you’re not feeling pasta and are making something that’s meaty for your main then this super simple Krautsalat from Food 52 is a great side. It’s just cabbage, salt, vinegar and touch of oil… but it’s crunchy and tangy and the perfect compliment to something substantial.

Project Time

  • I’m gonna get weepy about Brooklyn again for a minute and indulge our love of all things Caribbean with this Jamaican Beef Patty recipe from ButterBeReady. For those who aren’t familiar, every culture has some sort of dumpling or hand pie standby and this is the one from the islands. In addition to the recipe there’s all the historical info you need in this post. This is definitely worth doing if you don’t have ready local access - and I’m pretty sure that a big batch would fare well in the freezer if you take the time to knock it out.

Something Fun (or Interesting)

  • I mentioned Utica Greens above but didn’t link to any recipe because the one I always use is from Chanatry’s Market in Utica. And the recipe is on a scrap of paper that came out a newspaper a long long time ago when things clearly cost less money… and which I now proudly share with you!

  • For those who don’t want to print this out it’s also on this Home in the Finger Lakes post - along with a nice history on the dish… and a decent number of ads.
