Everyday Recipes

  • If you live in Chicago you both know how to properly pronounce “gyros” and you don’t need this recipe because you can get a good one on just about every street corner. For everyone else, this recipe for Gyros with Tzatziki Sauce from Alton Brown will give you a very solid approximation. You can even root for a losing sports team while eating it to complete the experience.

  • There are probably even more versions of Mujaddara as there are ways to spell it, but they always have a foundation of rice, lentils, onions and a tangy yogurt sauce. This Mujaddara recipe from Saveur is a great jumping off point. While it might sound like a side, and can be served as one, this has been an excellent simple dinner for me plenty of times.

Project Time

  • When I first lived in Brooklyn we were down the street from a classic Italian Pork Store straight out of the Sopranos. They rolled up their own braciole and you could just buy a few from the grumpy old butcher and jump right into braising. To do it all at home this Beef Braciole recipe from Serious Eats walks you through a discussion of the best cuts of beef to use and then provides easy to follow steps to make your own. Definitely worth doing next time you think of making meatballs and then decide you’re bored and have a little bit more time to commit for Sunday dinner.

  • Despite my faith in the pronunciation abilities of the people of Chicago it seems we’re even mixed up here. The thoughtful gentleman at the end of this clip clears it all up for us… until he doesn’t!
