  • Sometimes I like my vodka in a glass next to my pasta, and sometimes I like my vodka in my pasta, and sometimes maybe I like both. Penne alla Vodka is one of those rare dishes that can make just about anyone happy — even picky eaters. It’s rich, bright, tomato-y, and all around delicious. This recipe comes from Dan Pelosi.

  • Another people-pleasing classic is Chicken Milanese. A picky kid can enjoy something branded as a giant chicken nugget, while you simultaneously savor a refined chicken breast preparation with a side of lemony arugula salad. This recipe comes from Ina Garten, who shines with these sorts of classics.

Project Time

  • David Chang, owner of the Momofuku restaurants, has a very easy and delicious Bo Ssam recipe. It’s a big pork butt, marinated in salt and sugar overnight, oven roasted for 6 hours, and then browned in a hot oven just before serving. You serve it with rice, various sauces and lettuce wraps. If you need a hunk of meat for a group, this is a simple recipe that will definitely impress your crowd (and is really fun to dig into).

  • Chris Young is a chef who helped write the Modernist Cuisine cookbooks and founded Chefsteps. He has a new video that takes a deep, deep dive into what’s really happening when you sear a steak, along with some great tips. Be warned, though, ultimately his goal with this video is to sell you his newfangled wireless thermometer.
