Everyday Recipes
If you’re looking for a different way to go with broccoli, or really any cruciferous vegetable, this Broccolini with very delicious garlic sauce recipe from Food 52 offers a whole new avenue to explore. Spoiler alert, that avenue is paved with Fish Sauce, which you can use very specifically as they do here, or just toss a dash on top of your standard preparation to change things up.
In the easy but interesting world of sheet pan dinners this Salmon with Roasted Fennel and Oranges from Grossy Pelosi seems quick enough for a weeknight but looks fancy enough for company. I definitely plan to give it a shot sometime soon.
Project Time
If you’re having people over for dinner and you want to make chicken that’s classic enough to satisfy all tastes AND interesting enough to make it fun to cook then do a classic preparation with a touch of French technique. This Basque Chicken with Artichokes, Peppers and Chorizo from Daniel Boulud is not technically that big of a project as the only extra step is a marinade the day before, but prepping artichokes lands it in the project category for me. It’s definitely something to take your time with and make for company.
Something Fun (or Interesting)
We’re using fish sauce in our first recipe today, and most of us think of this as a strictly Asian ingredient, but variants of this funky sauce show up all over the world and one called Garum was integral to ancient Roman cuisine.
