Everyday Recipes

I love seafood in the winter and a recent trip to Copenhagen (more on that below) has me back at it in full force. A few ideas for home use below:

  • One of the easiest things to do at home is a pot full of mussels. I usually just buy a bag of them, melt some butter in a pan, toss in chopped onion, add the mussels and a solid glug of white wine. Then cover and wait a few minutes until they’re all open and eat with a baguette to sop everything up. When I want to make it a little heartier and more interesting I add some chorizo and fennel!

  • If you prefer more diversity in your seafood then try a Bouillabaisse. I use this recipe as a starting point but you can really use whatever you’ve got on hand and it’ll be good. If you have French friends they might get picky - but half the fun of having French friends is to get them all riled up about stuff like this.

  • Finally, if you want to go full luxury then Lobster in Cream Sauce is hard to beat. We had a great version of this on our trip last week and this is pretty close. If that seems like too much work just go classic and enjoy.

Project Time

  • If you love oysters it’s worth figuring out how to do them at home. Not only can you eat a lot more without taking out a second mortgage on your house, but it’s the kind of low effort thing that people will be disproportionally impressed by. All you need is the right knife, the right technique and the right accouterments and you’re off to the races. And yes… this whole segment was an excuse for me to be able to use the word accouterments in a sentence 😀 

Something Fun (or Interesting)

  • As I mentioned at the top, we were lucky enough to go to Copenhagen last week and had lunch at a little restaurant called Noma. This is a recipe newsletter, not a travel journal… but for those who are interested we wrote up a post on our Noma experience with pictures we took before we’d had too much to drink. We’ve also included a rundown of the places we liked most in Copenhagen.
