Everyday Recipes (Soup Edition)

As you might have noticed, we’re trying something new with a great sponsor for today’s edition. We usually say no when folks approach us for these sorts of things, but we actually use Brodo and are excited to have them on board!

In honor of this here are a few soups we love to make:

  • Classic clam chowder is more of a restaurant thing for me, but this Manhattan Clam Chowder is something I make at least once each winter and then wonder why we don’t do it more often. I guess it also makes that case that a “chowder” doesn’t have to be drenched in cream? (Sorry that this one is broth free… but it’s great soup!)

  • Potato Leek is one of those recipes that uses very few ingredients to makes something complex and satisfying. I learned to make this from the Cooking at Home with Jacques and Julia cookbook, but can’t seem to find the recipe online. The version shared here is close enough, but tells you to add some cream at the end - which you could do or skip. I usually just drizzle a little olive oil on my bowlful and call it a (good) day.

  • My wife makes the Lentil Soup in our house. It’s good and we eat a lot of it. She freestyles, but this version is a good template. We don’t add the tomatoes, but feel free. No need to get too precious with the herbs. Do try to include some kale or some other leafy green. Sorry about all the ads on the page on that one!

Project Time

And 2… he’s making potato leek soup with dried potato flakes. We’ve not tried this, but if it’s good enough for Jacques we are definitely intrigued!
