Everyday Recipes

  • I’m always looking for different ways to serve fish, and this Sea Bass in Shredded Potato Skin from (our beloved) Jacques Pepin is a great option. As Jacques mentions, this preparation could work for a bunch of different fishes aside from sea bass, including halibut, swordfish or arctic char.

  • Dips are delicious. And, frankly, I don’t make them frequently enough. Eggplant dips, in particular, can provide outsized flavor for the effort. This Smokey Eggplant Dip from Smitten Kitchen is great way to get some complex flavors in a tasty dip in a pretty quick recipe.

Project Time

  • My favorite pizza to make at home is Sicilian-style. The only thing that really makes it a project is making the dough ahead of time. But when making Sicilian-style, you don’t need to worry about stretching dough onto a peel, or the dough getting stuck on the a pizza stone, or having to make a whole bunch of little pizzas (though all that can be fun too). With Sicilian, you stretch dough into, and assemble on, a sheet pan, and then pop it into a properly heated oven. If you feel like making some pizza at home, give Sicilian-style a try. Chefsteps has a new recipe out, and Kenji has one too that’s worth considering.

  • Here’s a fun video of cooks of three different levels each making different versions of pasta carbonara. I picked up a technique or two I’m going to include in my next bowl of carbonara.
