Everyday Recipes

  • Although I haven’t made it for a few years, there was a time when I would make some version of this potato chip Spanish tortilla pretty much weekly. It’s a quick, easy and inexpensive pantry dinner. The version here uses salt and vinegar potato chips, but I’ve used both plain and sour cream and onion, all with great success.

  • Given that a Spanish tortilla is basically just a big omelet, we’ll continue the breakfast theme. Next time you’re in the mood for something pancake-like, give a Dutch Baby a try. Don’t be intimidated; it’s just a big ol’ oven-baked pancake.

Project Time

  • If you live near a great bagel store, you can probably skip this project. But if you, like myself, cannot find a decent bagel anywhere, you should consider making your own bagels. There’s some prep and some waiting, but it’s really not as hard as you might think. The nice thing about making them yourself is you get to make them however you like. I personally like mine made with an abundance of everything bagel seasoning and some extra salt.
